Those who have never tasted Maiori’s chocolate eggplant may turn up their noses, but the first taste is enough to realize that this is an archaic pastry masterpiece. Created to celebrate the Feast of the Assumption, this recipe transforms the iconic summer vegetable into a sweet and velvety base.
The process is meticulous: eggplants are fried twice, then dipped in a “giulebbe” of sugar and bitter cocoa. Layered with almonds, pine nuts and cedronata, they create a complex dessert, where the bitter note of dark chocolate goes incredibly well with the eggplant flesh.
